Pepper Cheese Soup

I love soups and this recipe is especially good and sinfully fattening; but it's worth it!
3/4 c finely chopped carrots
1/2 c finely chopped celery
1/2 c finely chopped onion
several garlic cloves
1 c Bisquick
1/2 tsp. paprika
1/8-1/4 tsp. ground red pepper
1/8 tsp. black pepper
4-10 3/4 oz. cans chicken broth
2 c 1/2&1/2
2 c cheddar cheese
Cook first 4 ing. in butter or olive oil till tender, about 10 min.. Stir in baking mix (Bisquick), paprika, pepper, and red pepper. Remove form heart. Gradually stir in chicken broth. Heat to boiling over med. heart, stirring constantly. Boil and stir 1 minute. Reduce heart to low and add 1/2&1/2 and cheese. Heat until cheese is melted.
This soup is easy to adjust...of course for our family I double it, or add extra broth. I also serve it with bread, or rolls.
This is one of the children's favorite soups. Hope you like it too.

  1. At least it has a few veggies in it! That makes it a little wee bit less fattening, right :)
